At the Château Les Bruyères we have a taste for excellence. We are proud of our deeply rooted passion and love of the homeland - this Auge country where so many specialities have such a deserving reputation.
Philippe Harfaux’s stunningly creative reinventions of some of the local dishes are an expression of his love for the very earth of this gastronomic region. His selection of the local produce is carried out with the utmost care. He then cleverly combines these with the greatest respect for taste, adding subtle combinations of aromatic plants and spices. Every aspect of the creation is calculated to allow the flavours of each product to burst through.
For this chef and owner of a gastronomic restaurant the possibilities of producing ranges of tastes and palettes of flavours are endless.
So we use “feuille de brick”- an extremely fine crisp pastry - which holds the aromas of the ingredients longer so as to allow them to burst on to the palate then allowing the flavours to follow through without necessarily mixing.
