Scallops and veal sweetbreads on the citronnella stick

Carpaccio of red tiger prawn and scallops flavoured with small orange oil

Around the Duck Foie gras

Foie gras marinated in Pommeau from the Manoir de la Brière des Fontaines, with apple chips
